Michigan Blueberry and Peach Salsa

Ingredients

  • 1 1/2 cups fresh blueberries
  • Zest and juice of one lime
  • 1 large peach, peeled and finely diced
  • 1 small shallot, finely chopped
  • 3 Tbsp chopped fresh basil
  • 3 Tbsp chopped fresh chives
  • 2 Tbsp Blazin’ Blueberry Jelly
  • 1 Tbsp olive oil

Directions

Coarsely chop half the blueberries. Toss chopped blueberries with whole blueberries and remaining ingredients. Add salt and pepper to taste. Serve immediately or cover and chill up to 24 hours!!! Makes 3 cups!

Pat at Blueberry Haven made this and used it with a grilled pork tenderloin, yum!
