Bait…of the Blueberry Kind

Yields1 Serving

 2 cups Flour
 1.50 cups Sugar
  cup Butter or Margerine
 2 tbsp Double Acting Baking Powder
 1 tsp Salt
 2 Unbeaten Egg Yolks
 1 cup Milk
 2 Egg Whites
 1 cup Frozen or Fresh Blueberries

Preheat oven to 350 degrees. Sift together flour and sugar.

Then cut in butter until it is the size of small peas. Reserve 3/4 cup of this mixture for crumb topping!

Then, add to the remaining mixture:
Baking soda, salt, unbeaten egg yolks, and milk.

Beat for 3 minutes with electric mixer at low speed! Beat egg whites until stiff but not dry. Fold gently and thoroughly into batter.
Spread into greased 12"x8"x2" pan.

Place 1 cup of blueberries over batter. Sprinkle with crumb mixture. Serve warm as a coffe cake, or cold with whipped cream.

This recipe was originally from the 1954 Pilsbury Bake-Off and was then featured in MidCenturyMenu.com! We had to give it a try because of our love of blueberries, and BOY was it worth it.
