Happy Mother’s Day!

This shout out goes to all the moms who for the last six weeks have tirelessly answered, “Mom, mom, mommy? Mother! Mom, what are you making for dinner?” and emptied the dishwasher for the 700th time in a day.

The first day of the Staying at Home order felt like my perfect day. Everyone was at home. We ate at the same table and we enjoyed being together. However, as the days went on and on and on, it’s no longer so perfect. We sequestered ourselves in our house in Grand Haven. My youngest son, his girlfriend, my middle son, and myself. My husband is deemed an essential worker and has done needed work in the medical field, so he quarantined himself from us.

My parents have been confining themselves at their home in Florida. A friend of theirs was the first person that I actually knew to pass away to the COVID-19. Rest in peace, Al Bush. My boys always referred to Him as “pool Al” as you could always find Al at the pool in my parent’s community. He would be there with “his tunes” as my boys said and a smile on his face.

We are all missing our regular lives and loved ones too. For Mother’s Day, let’s lift each other up. Send a shout out to a mom you cherish or admire.

My shoutout goes to my mom: she has impacted me in so many ways!

I know I get my creativity and style from her, as well as, my willingness to try anything new and to always see the world and others with my glasses always half full. I love you, Mom!

Here’s to all of the moms working over time or calling just to check to make sure we’re okay, have hand sanitizer, and are wearing a mask, Thank you!

Tif’s Lemon Loaf a la Starbucks (With Blueberries!)

Perfect for Mother’s Day Brunch!

POUND CAKE

1/2 cup milk
  • 1 TBSP grated lemon zest
  • 1-1/2 TBSP fresh lemon juice
  • 1-3/4 c flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 c blueberries (if frozen don’t defrost)
  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 large lemons

FOR THE GLAZE

  • 3/4 c powdered sugar
  • 1/4 tsp lemon zest
  • 1-1/2 TBSP fresh lemon juice

PREHEAT OVEN to 350

In one bowl milk, lemon zest, and lemon juice, whisk together. Let sit for 10 minutes while you do the rest of the recipe, ok if it’s lumpy.
 
In another bowl 1 3/4 c. flour, baking soda, and salt. Whisk together.  Put the blueberries in their own bowl tossing together with a TBSP of flour.

In another bowl or if you use an electric mixer, that bowl works.  Cream together the butter and sugar, then beat in the eggs one at a time. Scrape down the bowl and beat in 1/3 of the flour mixture and half of the milk mixture. Again use 1/3 of the flour mixture and half the mixture and stir, finish with the remaining flour mixture.  Then evenly fold in the dusted blueberries.

Pour into a bread pan.

Bake for 50 to 60 minutes.  Cool in pan for 10 minutes before you try to take out of the bread pan and then cool completely.
